Welcome to the forum.
When you're in the setup wizard, you can add the name there. If you already have the score set up, choose the text tool. You will see a small box at the title. Double click that box, and you will be able to edit the existing text.

Question: In SongWriter 2010 you can change this via the File Info dialog (from the File menu) - is this available in 2007 too?

No. 2007 does not have that menu option.
