How do I go from an SATB a cappella choral score with each part having its own line (4 staves) to a two-stave hymnal score (SA / TB) in the same piece?

The answer to that single question will affect the answer you require.

it is pointless to give you any other answer without that information.

Finale (started with ver. 3.0) now using 2012 under Windows 8.1
basically ALL Garritan libraries, plus XSample Chamber Ensemble.

Assuming you're using Finale, create Staff Styles with staff names for SA and for TB, apply them to the staves you've chosen to be contrapuntal and then hide the extraneous staves.
