I am working with a young composition student who has been outfitted with Printmusic, not Finale. Is it possible to see more than one page at a time in Page View using Printmusic?

Not as such. You can select Window>New Window, which will give you a new window for the current score. This will let you view p. 1 in one window, and p. 2 in the other, but that's as close as you can get.
