I need to know how to set up Finale and/or my Roland XP-80 in order for Finale to play multiple sounds off of my keyboard at once. I see that there is an instrument list in which you can select differing instruments, MIDI channels, and program changes for each staff. However, when I play the piece back, all staves use whatever instrument my keyboard is on in that particular performance, rather than using a combination of 16 total instruments in that performance. What do I need to do?

There are several options.
(1) set your XP80 to GM mode, load the GM library in Finale, assign the appropriate library instruments to your staves and there you go
-> that's the easiest and fastest way
(2) set you XP80 to performance mode, create new Finale instruments (these are data packages which tell your XP80 to switch a performance's part to the desired patch) and assign these instruments to your staves. Save this library.
-> That's the most flexible way as you can use the library for other documents as well
(3) set your XP80 to performance mode and create a new performance for each piece you want to play back. Create Finale instruments which make a staff send its data on a specific MIDI channel, but make it not send out patch selection data like MSB/LSB and program change messages. Set up the performance within the XP80: select your patches in the "part" submenu, set volume, panorama, effects, tuning, etc.
-> That's the way which will give you the best musical results
I'm using a JV1080 myself (which is the XP80's rack version), a Korg Triton and a Yamaha S80 for which the same options are valid.
