I've recently tried using Finale for the first time in OS X. Each time I launch though, after Classic mode is running I get a pop-up saying that Finale can't find the "Finale2.rsrc" file. Once I find the file requested and double-click on it Finale launches fine and seems to work as expected. Does anyone know how to solve this slightly irritating problem with launching please?

Two ideas:
1. The file "Finale2.rsrc" should live inside the Finale folder with the Finale application.
If the file "Finale2.rsrc" isn't there already, move it to the Finale folder.
2. Rebuild the desktop, if you haven't rebuilt it recently.

That's where the rsrc file is sitting in fact. I'll give it a try rebuilding the desktop though. Could it be that because I have both 2002 and 2002b as well as both rsrc files in the same folder the programme is getting confused? This doesn't happen when I boot in OS9. Any further thoughts?

You have "both 2002 and 2002b as well as both rsrc files in the same folder".
First: You don't need 2002 when you have 2002b, since 2002b is a "bug-fixed" version of 2002. Get rid of 2002, and stick with 2002b.
Second: You have both rsrc files in the same folder. Two files with exactly the same name in the same folder. That's definitely a no-no, and it shouldn't be possible at all. Get rid of the oldest rsrc file.

Actually I've always kept old software on the basis that clients may need me to have access to my old software.
One of the rsrc files is called "Finale.rsrc", and the other is called "Finale2.rsrc", so they don't have the same name at all.
I tried ditching Finale 2002 as you suggested and it made no difference.

But this is still the same version; it's not like the difference between 2001 and 2002.
