I have two questions I'd love to hear some answers to:

How do people judge where to place hairpins vertically? I use Align/Move a lot between dynamics but sometimes there aren't any. I usually just place dummy dynamics, Align/Move, then delete the dynamics, but is there a better way, say, a way to display a baseline? Would be interested to hear all kinds of processes people use!

The other is about instrument names. Is there a way to change the default names for instruments? I find myself starting every project making the same amendments (particularly to short staff names).

True, but that doesn't help if you use the setup wizard. Make a simple Finale script; easy to make and super-fast to use.

It's no longer a .txt file. Now it's a .sql database, or something similar.

I wish I had a good answer for your about hairpins. It's an area of Finale which is laboriously manual. I guess I align them with nearby dynamics and other hairpins when present, but otherwise just do them visually.

In a score, you can apply hairpins with Jari's plugin "JW Pattern". Combined with Tobias' TG Tools plugin "Allign Dynamics", you should get good results quickly. There will always be some final fine-tuning, but these two plugins alone can give great results if the music itself is not too complex and the score not too dense.

This subject has been discussed on this forum several times before.  As Mike says, starting with F2012, using various text files to define the instruments used by Finale has been superseded with a database paradigm.  Just as you could change instrument names in the text files, you can also change instrument names in the SQLite database, but you will have to have some relational database skills.  It is not for the uninitiated, and certainly not intended to be done within Finale, since no GUI or editing mechanism is provided by MM.

The Finalescript is an easy one, and once written, it is globally accessible.
I use the Setup Wizard and prefer Norwegian instrument names. And the script goes:

search "Accordion" replace with "Trekkspill"
search "Violin" replace with "Fiolin"
search "Timpani" replace with "Pauker"

etc
