I have scanned in a bunch of solos for my students to practice with and be assessed on. I have tried to open them in smart music and the finale performance assessment program on my mac at school, but nothing seems to be working. Can you please supply step-by-step instructions on making a solo into a smart music file? Can the assessment files have articulations/trills?

Finale 2005 and Finale 2006 come with a chapter of instructions for this that's found in the User Manual from the Help menu. If you're using either of these versions of Finale, look in the Table of Contents for the chapter on creating SM accompaniments (it's chapter 44 in 2006). Earlier versions of Finale didn't have the ability to create assessable files.

If you're using Finale 2006, I'm not sure if the SM files it creates that contain notation are compatible with SM 8.5. SM 9.0 might be required for this. It's supposed to be out soon. FPA should be ready, as it was updated with Finale 2006.

Some articulations can be kept, namely ones that don't affect which notes a student will play. SmartMusic can't really assess trills, and so it's not possible to include those in assessment files.
