After I've already set up a score with the wizard, and say i've forgotten an instrument, is it possible for me to go back and add that instrument without having to start all over?

Before you do anything, remember that any new staff will appear at the bottom of your score, or, if you click a staff, the new staff will appear directly above it.

Select the Staff Tool. Go to Staff> New Staves or New Staves with Setup Wizard. The difference is that New Staves simply puts a new staff in the score; with the Setup Wizard, you can specify the instrument and Finale will take care of the clef and transposition.

If after you do this you don't see any new staves, select the Page Layout Tool and go to Page Layout> Optimize Staff Systems and select Remove Optimization and click OK.
