1. Thanks to an earlier answer, I successfully transferred lyrics and font options to another doc, but I wonder if there is a single command that would cause the entire set of options to transfer? In the Command Reference there's two words that say "house style." What does that mean and how is it used in a FS, if at all?

2. I set up a script to optimize the score (all staves, whole document). I can get it as far as the dialog box , but I don't know the command to cause FS to click the OK button!

I just read in one of the sample scripts that FS will not OK a dialog box, so presuming that's still true I have my answer there.

In Finale 2007, I don't think it's possible to for Finalescript to press the OK button. But the updated Finalescript 2 included with Finale 2009 will do this easily with the simple command:
press OK
